Amazing cooking tips everyone should know

What, more cooking tips? Yes!

I got these from readers when I ran my contest and they were so good, I know I had to share them with you.

So here goes!

1.    Every kitchen needs fresh lemons because lemons are amazing. They add flavor to everything, can be frozen and used as ice cubes, they remove the smell of onions and fish from your person, and can sterilize cutting boards in a snap!  I kid you not, LEMONS RULE!

2.    Lemon is your best friend. The acidity kills everything and balances out the ph levels. They don’t teach that enough in ServSafe or at restaurants!!

3.    just have everything ready to go be for you start, stay two steps ahead.

4.    I use bone in chicken breasts and freeze the leftover carcasses and meat.  Once I’ve collected 8-10 I prepare homemade chicken stock on a Sunday afternoon.  This usually makes about 6 or 7 cups and i freeze it to use throughout the month for soups, risottos, and anything else where chicken stock is needed.  Saving the bones over time is a great money saver and easier than buying a while chicken at once and cutting it up just for stock.

5.    make lots of extra so there’s lunch tomorrow

6.    When cooking with oil, be sure to have proper safety items on hand. If flames do rise, cover the pan with a damp cloth. Don’t panic!

7.    Save all of your unused vegetable scraps in the freezer.  Then when you’ve collected enough veggie junk, make vegetable broth.  Beats paying $3 dollars a quart for it.

8.    Here’s one, fill a cake pan to a little more than half to avoid an oven disaster.

9.    When cooking pasta, always reserve some of the cooking water so it can be used to extend or thicken the pasta sauce.

10.   watch those fingers!

    salt is also great to use to wash up… exfoliates the hands.
